There were few things that made me more excited as a child than when my mother would drop a box of fudgsicles into the shopping cart. They were a rare treat. Mostly because my mom knew that the second they hit the freezer I’d devour them.
How many fudge pops did you eat in one sitting as a kid? (“Sitting” might be a loose term. You probably ate them as you ran around in the yard.) One popsicle was never enough—sometimes you swore you could eat a million. They were just that good! Of course, as an adult you’re much more mindful of how much you’re eating, and the idea of eating an entire box of these treats is probably not as appealing as it once was.
Want a recipe that good but much healthier? This simple, blend-and-freeze fudgsicle recipe contains only six good-for-you ingredients. While eating a million is not recommended, neither is eating while running around, enjoying two while sitting at the kitchen table is definitely okay!
Make 6 popsicles
1 can (13.5 oz) full-fat coconut milk
3 Tbsp. cacao powder
1/4 cup maple syrup
1/2 tsp. vanilla
- In blender, combine all ingredients and process until smooth.
- Carefully pour into popsicle molds.
- Freeze 6-8 hours or overnight.
